Finding gluten-free solutions

VIC PICHETTE, a longstanding hospitality consultant, recently founded Gluten Free Hospitality Consulting. The firm provides food/menu item design, marketing, gluten-free tastings and staff training, among other services. Pichette has been in the hospitality industry for more than two decades. He previously owned the consulting firm, Eye on Success.

What does your consulting firm offer for businesses in the hospitality industries?

We work with businesses and chefs on their current menus and determine what is already gluten free, and turn basic menu items into something GF friendly. We have beer-tasting clinics to educate the restaurant on some amazing GF beers, and include how to make awesome GF drinks with ingredients they already have. We also have a marketing division that assists in traditional, video and digital marketing services.

What are some ways bars/restaurants can make their menu more gluten free?

The truth of the matter is, every restaurant already has GF foods on the menu; identifying them is the easiest thing to do. Then, understanding how to create GF meals and incorporating them into some menu items is the next step to success. The advertising part is the most crucial part of the process. If people don’t know you offer GF foods and beers, they won’t come.

Could you describe your experience prior to starting Gluten Free Consulting?

My background in hospitality consulting started as an owner of a licensed private investigating business. I was asked to investigate bartender theft, but I got very good at seeing additional problems. Over-pouring, drink giveaways, poor employee attitudes and customer service and non-compliance. … I eventually opened the consulting firm, Eye on Success. It’s important to see things from the outside in. •
