Providence chefs nominated as best new chefs by Food & Wine

NEW YORK – Two Providence-area chefs – Nemo Bolin and Benjamin Sukle – are in the running for Food & Wine’s list of the 10 most brilliant up-and-coming chefs.

Every year, the publication comprises a list of the best new chefs in the country, based on votes from readers. Bolin and Sukle are two of 12 chefs competing to earn the title of most brilliant new chef from the New England area.

Bolin is the chef at Cook & Brown Public House located on Hope Street in Providence. On its website, the restaurant is described as “a modern, New England-inspired version of a European Gastropub.” Bolin studied at the Cambridge School of Culinary Arts and worked at Rubicon in San Francisco; Craigie Street Bistrot in Cambridge, Mass., and No. 9 Park in Boston prior to opening Cook & Brown.

He told Food & Wine that the reason he wanted to open a restaurant was: “I live to hear that unmistakable sigh when someone takes the first bite of their meal and just melts into their chair.”

Sukle is the chef at The Dorrance, a restaurant located at 60 Dorrance St. in Providence. Food & Wine said Sulke, who went to culinary school at Johnson & Wales University, is “amazing” because “he’s bringing the ultra-locavore values he learned at Copenhagen’s Noma to New England, honoring and elevating Rhode Island ingredients.”

When asked what he learned at Noma, Sukle told the publication: “Not being afraid to just put three things on a plate, like Noma’s carrot course. It’s just a carrot, but when you taste it, the flavor is absolutely insane.”

One chef from each of the following 10 regions will make up Food & Wine’s best new chefs list: California, Great Lakes, Gulf Coast, Mid-Atlantic, Midwest, New England, New York Area, Northwest & Pacific, Southeast and Southwest.
